My husband swears by Cactus Juice! The little buggers love him and he's tried lots of different 'remedies' with Cactus Juice producing the best results. It has made his vacations (and mine!) much more enjoyable.
FYI ... I have been to CocoView, byt never as a guest, but I have heard nothing be wonderful things about the resort and its staff.

You do have to apply it more frequently than DEET but if I had to use something, I'd use the Cactus Juice. DEET kinda scares me due to its properties and I've read that it can harm neoprene and some rubber products...and it smells. Cactus Juice has no odor.
Let me know if I can answer any other questions. I've got one for you........how are you getting to Roatan, via what route? May have some hints for you on that.
