You have a few options for San Pedro Sula. These are the ones I have tried that would work in that time frame.
Take a tour or taxi to the Imapro woodworking factory to see them produce wood handicrafts and shop in their showroom. Probably the nicest source of crafts on the mainland.
Take a cab into downtown and stop in at the Gran Sula (now Best Western) for a drink or bite to eat. Walk around the downtown square and the adjacent handicrafts markets.
Take a tour of one of the nearby banana plantations. Maya Caribe did a good one. Please note these could have been discontinued since Mitch.
The new airport in San Pedro is pleasant enough that you don't really have to go anywhere. San Pedro is not a terribly scenic city but it is interesting to take a look around. Use caution if you go wandering around and ask if areas are reasonably safe before venturing out. I wouldn't go too far, traffic can be a concern and although flights are frequently late, they can also be unpredictably early and leave without you.
