Went to the Taste of Roatan yesterday--as did the rest of the island. Great Food! The band! Clowns for the kiddies! On the beach! Handcrafts of all sorts! This is the second time we've had this Las Palmas party here on the island. Dian Lyn once of Bite on the Beach has done it again! Thanks Dian!
As we made the trip down island to pig out at Dian's party, we noticed it's Springtime on Roatan!
There's a smallish tree here that goes by several names. Most frequently Madre Cacaw (spelling?) The tree is known for sprouting from a straight stick during rainy season quite easily. As a result it is often used for fence posts that need to grow and become permanent. In springtime it turns into a solid mass of pink blooms. Right now every fence post on the island is all decked out pretty in pink! As you drive the road everywhere you look is pink--ALL OVER THE ISLAND! Times like this I am reminded of how fortunate we are to live in a place of such awesome beauty. but Sandra is best to comment on the race. Still, what a wonderful time for a little jog around the island for the triatholon folks!
If you have time, you might want to sight see a bit slower--take time to stop and smell the fenceposts?
Other uses for the long lasting blooms for those who cook? It's a saltly bloom that is not only pretty, but it also makes a great addition to scrambled eggs for breakfast--or anything that could use a bit of salt. Try it!
I know this is not earth shattering news. But it's so beautiful here right now I had to mention it~
Another note. Mardi Gras on Roatan was quite a fun time--so much so it will become an annual event! So keep those togas ready! Mark Fat Tues on your calendar!
