I've stayed at the Mayan Princess, and we loved it. It's a bit pricey, but the pool is totally incredible, and the villas have a kitchenette (so you can minimize some of your food and drink expenses). The one bedroom villas have a fairly comfortable pull out couch in the living room, and plenty of space.
